I made healthy lasagna. No really! Just your run-of-the-mill lasagna, with a few healthy tweaks. Grilled zucchini slices instead of noodles, fresh organic spinach, leaf basil and oregano, canned artichokes (I know, I know, but they were organic!), and organic mozzarella, ricotta, and shaved imported parmesan. Most of my kitchen experiments go awry, this one was delicious.
